Brunch Ricotta Banana Grilled Cheese

The great thing about grilled cheese is, in my humble opinion, the way that it has grown up with me. Once simply a couple of pieces of bread with sliced American (or cheddar), now a fancy-ish palette for fun flavor combos. This Ricotta Banana Grilled Cheese is perfect for brunch, breakfast, or really any time of day. Pair with a side salad for a well rounded meal.

If you’re looking for something that feels like comfort food but also feels a little fancy, look no further than my glamorized grilled cheese. This yummy dish features ricotta which is high in protein and calcium and bananas for energy and potassium.

I used high fiber bread and paired it with a side salad to create a deceptively balanced meal. Better yet, it took 10 minutes or less to make!

Brunch Ricotta Banana Grilled Cheese

This is perfect for brunch, breakfast, or really any time of day. Pair with a side salad for a well rounded meal.

Ingredients
  

  • 1 tbsp Mayo or olive oil or butter would be fine too!
  • 2 slices Whole grain artisan bread or any bread you like!
  • 1/4 cup ricotta cheese I used part skim
  • 1/2 of 1 banana

Equipment

  • Skillet
  • spatula
  • measuring cups and spoons

Method
 

  1. Preheat skillet over medium heat.
  2. Spread mayo or (or olive oil or butter) on outside of bread slices.
  3. Slice banana long-way to fit on your bread
  4. When the skillet is heated, spray lightly with cooking spray and spoon ricotta onto the skillet.
  5. Add bread (mayo side down) onto the skillet as well as the banana slices.
  6. Heat ricotta and bananas for ~2 minutes per side or until they are beginning to caremelize and flip.
  7. Add hot ricotta and bananas to one slice of bread, top with the second slice.
  8. Slice in half or serve whole and enjoy.
