Preheat skillet over medium heat.
Spread mayo or (or olive oil or butter) on outside of bread slices.
Slice banana long-way to fit on your bread
When the skillet is heated, spray lightly with cooking spray and spoon ricotta onto the skillet.
Add bread (mayo side down) onto the skillet as well as the banana slices.
Heat ricotta and bananas for ~2 minutes per side or until they are beginning to caremelize and flip.
Add hot ricotta and bananas to one slice of bread, top with the second slice.
Slice in half or serve whole and enjoy.
